Ingredients:
- 5 oz. leftover taco meat (ground turkey, beef, or chicken)
- 1 large flour tortilla (whole wheat or low-carb option)
- ⅓ cup sautéed bell peppers (fresh or frozen)
- ¼ cup black beans (whole or smashed)
- 3 tbsp shredded cheddar cheese
Instructions:
- Warm your tortilla in a large skillet over medium heat.
- Layer one half of the tortilla with the taco meat, peppers, beans, and cheese.
- Fold in half and cook for 2–3 minutes per side, or until golden brown and crispy.
- Slice and serve with salsa, guacamole, or plain Greek yogurt for dipping.
🔄 Make it your own: Swap in kidney beans, add jalapeños for heat, or mix in a little enchilada sauce for extra flavor.
💡 Tip: For this easy recipe you can keep the black beans whole or do a quick smash to make them more like refried beans that will spread easily onto the flour tortillas. If you don’t have black beans, kidney beans are a good substitute to use.
🍽 Hack: Use frozen mixed peppers from your local grocery store as it cuts down on cooking. Give them a quick pan fry on the stove until they are soft and slightly browned.
