When it comes to meal prep, I love making a big batch of protein and finding creative new ways to pair it throughout the week. For me, variety is key to keeping things exciting and enjoyable. Recently, I whipped up a large batch of Instant Pot shredded Jamaican jerk chicken, and one of my go-to meal prep options was a quick and flavorful jerk chicken bowl.

Simple ingredients are used to create this jerk chicken bowl:

  • Jerk chicken: this recipe starts with my easy instant pot shredded Jamaican jerk chicken. It’s an easy recipe using a store bout jerk rub and skinless chicken thighs
  • Rice: Fluffy jasmine rice is called for in this recipe 
  • Pineapple salsa: a quick pineapple salsa is made using store bought pineapple chunks, red bell pepper, fresh cilantro, red onion and a squeeze of lime. Alternatively you can use fresh pineapple for the pineapple chunks. 
  • Black beans

HOW TO MAKE JERK CHICKEN BOWLS WITH PINEAPPLE SALSA

First gather all of your ingredients needed to make the meal prep bowls. 

Heat a small saucepan to medium heat and pour the can of black beans into the saucepan. Season with salt and black pepper to taste. Allow the beans to come to bubble then reduce heat and simmer for 10-15 minutes. 

In another saucepan, make jasmine rice to package directions. 

While the beans are cooking, make the pineapple salsa. On a cutting board, dice the pineapple chunks into smaller bite sized pieces, chop the red peppers, red onion and cilantro. Mix together in a small bowl and squeeze lime juice on top.

​Now that you have all the components of the bowl, you are ready to assemble the jerk chicken rice bowls. 

In a meal prep container, place jasmine white rice on one side.

WAYS TO CUSTOMIZE MEAL PREP BOWLS

​Rice: swap out the jasmine rice for brown rice or coconut rice
Low carb: replace the rice with cauliflower rice for a low carb option
​Toppings: add some extra zing with green onion, avocado or slices of fresh mango

  • 1 cup Jasmine rice
  • 1/2 cup Black beans
  • 1 can Pineapple chunks
  • 1 whole Sweet red pepper
