Easy BBQ Chicken Tacos Recipe with Creamy Slaw
These BBQ chicken tacos recipe with creamy slaw is so insanely simple to make that they literally come together in a matter of minutes. Filled with juicy bbq chicken, a low calorie ranch slaw and a few toppings to make it all melt in your mouth. If there is one thing I excel at, it’s reimagining a dish in an entirely new way. The second thing about me is that I absolutely love Mexican food. Recently I had some leftover rotisserie chicken and was getting tired of eating it the same way. So I decided to switch things up and create something fresh and exciting. Hence these bbq chicken tacos with creamy slaw was born. These bbq chicken tacos only take a few minutes of prep time making them perfect for an easy dinner recipe for your Taco Tuesdays.

INGREDIENTS NEEDED FOR BBQ CHICKEN TACOS WITH CREAMY SLAW

Here is what you will need for this taco recipe:
- Chicken: This is a great way to use any leftover chicken you already have cooked like chicken breasts, chicken thighs or chicken tenderloins
- BBQ sauce: My favorite barbecue sauce is G Hughes bbq sauce as there is no sugar added and the carbs is typically only 2 carbs per serving
- Slaw mix: Pick up a pre-mixed bag of slaw from your local grocery store to cut down on prep time
- Greek yogurt: Plain greek yogurt works best for this recipe
- Mayo: I used low fat mayo for this recipe, but you can use what you already have
- Corn tortillas: While I preferred corn tortillas, you can also use flour tortillas as well
- Ranch seasoning
- Apple cider vinegar

WHAT YOU WILL NEED TO MAKE THIS RECIPE
HOW TO MAKE BBQ CHICKEN TACOS
In a small bowl, add the mayo, greek yogurt, ranch dressing and apple cider vinegar and stir to make the ranch dressing.

Pour about a fourth of the bagged slaw mix into a separate bowl and pour the ranch dressing on top and stir to combine.

In a medium bowl, shred the leftover chicken using two forks. Once done, add the bbq sauce to the shredded chicken and mix throughly to combine.

Preheat a nonstick skillet to medium heat and spray with cooking spray. When the skillet is heated, warm corn tortillas in the skillet on both sides until they are crispy taco shells. Repeat process for all of the tortillas.
Now you’re ready to build your tacos. Place the creamy slaw on the bottom of the tortilla, top with the shredded bbq chicken.
Optional to top with toppings like avocado, sour cream, tomatoes and extra bbq sauce.

- 2 tsp Apple cider vinegar
