The easiest Jamaican Jerk chicken bowl with pineapple salsa you will ever make. These bowls are filled with delicious flavors and is the perfect balance of heat paired with a bit of sweet. This recipe is quick to prepare, making it an ideal option for busy weeknights and meal prep.
First gather all of your ingredients needed to make the meal prep bowls.
Heat a small saucepan to medium heat and pour the can of black beans into the saucepan. Season with salt and black pepper to taste. Allow the beans to come to bubble then reduce heat and simmer for 10-15 minutes.
In another saucepan, make jasmine rice to package directions.
While the beans are cooking, make the pineapple salsa. On a cutting board, dice the pineapple chunks into smaller bite sized pieces, chop the red peppers, red onion and cilantro. Mix together in a small bowl and squeeze lime juice on top.
Now that you have all the components of the bowl, you are ready to assemble the jerk chicken rice bowls.
In a meal prep container, place chicken in bowl along with white rice. Place a scoop of the black beans along with a scoop of the pineapple salsa on top.
