Chicken teriyaki meal prep is always one of my go to recipes. This one can’t get any easier as I used a few shortcuts to make this dish a no fuss meal. If you like slow cooker meals you may also like this stuffed bbq sweet potatoes.
Simple is the name of the game these days for me and nothing is easier than pulling together some simple ingredients, putting everything in a slow cooker and magically have dinner ready a few hours later.
WHY CHICKEN TERIYAKI MEAL PREP
If you frequent my blog then you know meal prep and healthy meals are kind of my thing. I love to eat healthy foods without sacrificing flavor. Teriyaki sauce is generally one of my 5 go to marinades for chicken so it is always in rotation in my house.
This time, instead of making a homemade teriyaki sauce, I decided to try Campbells teriyaki chicken marinades. This was a great option to use especially for busy weeknights. With a few added ingredients, this makes the perfect meal prep dish for the week.
INGREDIENTS NEEDED FOR TERIYAKI CHICKEN MEAL PREP
Even though we are using a pre-made teriyaki sauce there are ways to amp up the flavor and make it truly your own. I added a few additional spices and aromatics to deepen the flavor during the cooking process. Here is what you will need for this easy meal prep recipe:
Shopping list:
- Chicken breasts
- Garlic cloves
- Chili Garlic sauce
- Mixed peppers
- Onions
A few notes on the shopping list:
- You can sub out chicken thighs for the breast for a juicer texture
- I used fresh peppers but you can also buy a frozen pre-chopped bag similar to this
HOW TO MAKE TERIYAKI CHICKEN RECIPE
In a slow cooker, spray your container with a bit of spray pam.
Add your chicken breast, garlic, chili garlic sauce, peppers and 1/2 of the teriyaki marinade. Reserve the rest for later.
Cover the slow cooker with the lid and cook for 3 – 4 hours.
Once the chicken is cooked through, pull the chicken breast out and shred using two forks. Return to the slow cooker and stir with the remaining teriyaki sauce. For saucy chicken, let soak for another 20 – 30 minutes.
WAYS TO SERVE TERIYAKI CHICKEN
There are a few different ways you can serve this chicken to make it a complete meal. My favorite way to serve is by making meal prep bowls. Simply add either some brown rice or jasmine white rice, broccoli florets or your favorite veggies.
You can also add a few different toppings to brighten up the dish. You can add:
- Green onion
- Sesame seeds
- Fresh ginger
CAN I MAKE MY OWN TERIYAKI SAUCE
Absolutely! I chose to use a pre-made because I was short on time but you can make your own homemade sauce and use that as well. Here are the ingredients you will need to make a homemade sauce:
Teriyaki sauce ingredients:
- 1/4 cup Soy sauce
- 1/4 cup Orange juice
- 1 tbsp Rice Wine Vinegar
- 1 tsp Sesame oil
- 2 tsp Crushed red pepper
- 1 tbsp Shallot
- 1 tbsp Fresh grated ginger
Put everything in a small bowl and stir thoroughly to combine.
HOW TO STORE THIS EASY TERIYAKI CHICKEN MEAL PREP RECIPE
Storing this pulled teriyaki chicken is pretty simple. You can choose to store in big glass containers if you’re making a big batch of the chicken. Make sure it’s airtight container to avoid any additional air seeping in. Alternatively you can store in individual meal prep containers. This makes it easy to have the chicken already portioned out so you can simply grab it and reheat it when you’re ready to eat.
