Cook the Eggs. Scramble and cook the eggs to your preference. I prefer a lighter scramble for my eggs for this sandwich. Season with sea salt and black pepper to to taste

Next, sauté the spinach. In the same pan used for cooking the sausage or eggs, add a small drizzle of olive oil or butter. Sauté the spinach over medium heat for 1-2 minutes, until just wilted.
