Cook the Eggs. Scramble and cook the eggs to your preference. I prefer a lighter scramble for my eggs for this sandwich. Season with sea salt and black pepper to to taste
Next, cook the Turkey Sausage Patties. For homemade patties, mix ground turkey with seasonings like garlic powder, salt, and pepper, then form into patties and cook the same way. If using store-bought patties, spray a skillet with nonstick cooking spray and cook over medium heat for about 4-5 minutes per side, or until fully cooked.
Sauté the spinach. In the same pan used for cooking the sausage or eggs, add a small drizzle of olive oil or butter. Sauté the spinach over medium heat for 1-2 minutes, until just wilted.
Assembling Breakfast Sandwich
Toast the whole wheat English muffins for extra crunch
Spread 1 teaspoon of pesto sauce on the bottom half of each muffin
Add the scrambled egg to the bottom half of a muffin
Add a slice of cheese
Layer the turkey sausage patty on top
Top with fresh spinach
Place the top half of the muffin on and press gently
