Quick and Easy Creamy Egg Salad on Toast

A quick and easy creamy egg salad on toast is my new favorite way to enjoy eggs. With a rich and creamy texture loaded with tons of flavor this will quickly become your go to snack. If you love easy, high protein snacks you may also love my greek loaded hummus, chicken nuggets for babies, or these chick fil a grilled nuggets.

This egg salad recipe is not your traditional recipe. If you’ve spent anytime on my blog, you already know I reimagine recipes that are traditionally high in calories and fat and make them healthier for you. It’s no different with this quick and easy creamy egg salad on toast. While traditional egg salad is made with celery and mayo, I lighten things up a bit by using some plain greek yogurt and a secret ingredient. 

HOW TO BOIL & PEEL EGGS

First in order to make this egg salad on toast you have to start with the main ingredient which is hard-boiled eggs. Some people have challenges with boiling eggs properly (they are either too runny or overcooked in the yolk) and some have challenges peeling eggs properly. Hopefully the tips I provide below allows you to have perfect hard boiled eggs every time. 

Boil Eggs – To boil eggs, place eggs in a large pot and cover with cold water. Bring the water to a boil and then cover the pot with a lid and turn off the heat. Allow to cook for an additional 9-12 minutes depending on your level of doneness. For this recipe you will want the yolk of the eggs to be firm and not runny.

Ice Bath – Once the eggs have cooked, remove from the warm water and place in a large bowl and cover the eggs in an ice bath for about 15 minutes. After eggs have soaked in the ice bath, remove, place on paper towels and peel the shells.

Following this two-step method will make for super easy to peel eggs.

INGREDIENTS NEEDED FOR CREAMY EGG SALAD ON TOAST

The ingredients for this recipe are super simple and I’m sure you will have them already on hand. If not, a quick trip to the grocery store will be all you need to pick up these handful of items. 

  • Red Onion – a great way to add a bit of sweetness to this recipe
  • Green onion or chives – adds some color and some additional texture
  • Plain greek yogurt – swapping out the majority of mayo for greek yogurt adds some additional protein and lowers the fat content
  • Mayo – we use just a touch to balance out the texture with the plain greek yogurt
  • Dijon mustard (sshhh, this is the secret ingredient) – adds just a hint of spice which is so yummy in this dish
  • Whole wheat bread – base for the egg salad on toast

A few optional ingredients or toppings are:

  • Avocado
  • Tomato
  • Fresh herbs
  • Arugula

We will also use a few seasonings to spice things up and bring out the flavors in this great recipe.

HOW TO MAKE QUICK AND EASY CREAMY EGG SALAD

First gather all of your ingredients. 

Follow the steps and tips above to boil the eggs. Once the eggs are boiled and peeled, chop them into smaller pieces. Place the chopped eggs into a small bowl. 

Next, add the mayo, greek yogurt and dijon mustard in with the eggs. Next grate in the red onion. This will allow the flavor of the onion to go through all of the egg salad mixture. Then add salt, black pepper, and garlic powder to the mixture. Stir until throughly combined. 

Take two slices of the whole wheat bread and toast them to your level of doneness. Now you are ready to build the egg salad toast. You can place the egg salad directly onto the toast, top with the green onion or chives and enjoy that way. Alternatively, you can place some arugula on the toast, top with the quick and easy creamy egg salad, garnish with chives, and sliced tomato (or avocado).

Ingredients
  

  • 5 whole Eggs Hard boiled
  • 2 tsp Red Onion grated
  • 1 tsp Mayo
  • 2 tbsp Greek yogurt plain
  • 1/2 tsp Dijon Mustard
  • 1/2 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • Salt to taste

  • Alternatively, you can place arugula on the toast, top with the quick and easy creamy egg salad, garnish with chives, and sliced tomato (or avocado).
