These Mexican stuffed potatoes are great way to make your next Taco Tuesday just a little bit different. This yummy recipe is one the entire family can enjoy and even better they are perfect for meal prep! WHAT ARE MEXICAN STUFFED POTATOES
If you have ever had a craving for Mexican but didn’t want to be super indulgent, then these Mexican stuffed potatoes are a great way to get your fix. Using a roasted sweet potato as the base, the potato filling starts with ground turkey that is seasoned with traditional Mexican flavors. Flavors like fresh cilantro, red onion, chili powder, cumin and cheddar cheese. We use that yummy meat mixture and serve it on top of each potato. Next, use a few of your favorite taco toppings like green onions, jalapeños and homemade salsa and this easily becomes your go to meal for taco night.
WHAT TYPE OF POTATOES DO I USE
There are a variety of potatoes that you can use for these Mexican stuffed potatoes.
- Russet potatoes
- Red potatoes
- Sweet potatoes
- Japanese sweet potatoes
Of course the ones that I recommend for the greatest health benefits is either sweet potatoes or Japanese sweet potatoes.
Japanese sweet potatoes carry the same nutritious benefits of regular sweet potatoes however have a slightly different flavor profile. For starters, they are much sweeter than the traditional sweet potato. That extra sweetness pairs nicely with the smoky, heat elements of the meat mixture. I also really love them because if you are trying to transition from regular white potatoes to ones that carry more health benefits, these are an easier transition. They have a nutty, earthy flavor and are much drier and starchier which which makes them perfect for today’s recipe.
OTHER OPTIONS FOR TACO MEAT FILLING
When creating my recipes, I always use leaner meats in order to keep the recipes as healthy (and nutritious) as possible. I used a lean ground turkey for this recipe however there are other options you can use if you are a meat eater or if you do not eat meat.
Alternative meat options:
- lean ground beef
- lean ground chicken
- extra lean ground turkey
Meat free options:
- Tofu
- Impossible ground meat
- Ground mushrooms
MAIN INGREDIENTS FOR MEXICAN STUFFED SWEET POTATOES
The ingredients needed for this delicious meal are some you most likely already have on hand. If not, then a quick store run is all that is needed. Your shopping list should include:
- 93/7 ground turkey
- Black beans
- taco seasoning (Favorite store bought or make your own)
- greek yogurt
- low fat shredded cheese
- Jalapenos
- Red onions
- Japanese sweet potatoes
MEXICAN STUFFED SWEET POTATO RECIPE
Pre-heat oven to 350 degrees. Wrap your potatoes in aluminum foil and place on a baking sheet. Roast the sweet potatoes for 45 – 60. minutes or until the potatoes are fork tender.
While the potatoes are roasting, heat a large skillet to medium-high heat and put 1 tbsp of olive oil in the pan.
Add your diced red onion, jalapenos and garlic to the pan and let simmer until soft, about 2 – 3 minutes. Push to one side and add your ground turkey. Cook the ground turkey until browned. Drain your meat mixture and return to the pan. Reduce heat to medium heat.
Next, add your taco seasoning (to package directions), greek yogurt, and cheese and stir to combine.
Drain your black beans and add to the meat mixture and stir to combine. Let come to a gentle bubble and then simmer for 2 minutes.
HOW TO STUFF YOUR BAKED POTATO
When you are ready to stuff your sweet potatoes, split the potato down the middle and scoop out some of the potato flesh. You can use a spoon or a melon baller works well too. You can set the flesh part aside to use as a separate side dish.
Next, add your taco meat filling over the top of the potato. Now, you can top with your favorite toppings. I used:
- Green onions
- Homemade salsa
- Fresh Cilantro
- Fresh lime juice
SERVING YOUR STUFFED POTATOES
While this is a complete meal on its own you can choose to pair it with some simple side dishes if you choose. A few I personally enjoy are:
- Spinach salad
- Green leaf salad
- green vegetable of choice (broccoli, spinach, kale)

Ingredients
- 1 lb Ground Turkey lean
- 1 can Black Beans drained
- 1/2 cup Enchilada Sauce
- 1/4 cup Greek Yogurt plain
- 1/4 cup Mexican shredded cheese low fat
- 2 tbsp Red onions chopped
- 1 tsp Garlic diced
- 1 tsp Jalapeño diced
- 1 tsp Cilantro
Optional Toppings
- 2 tbsp Green onions chopped
- 2 tbsp Cilantro
- 2 tbsp Salsa or pico de gallo
Instructions
Baked Sweet Potato
- Pre-heat oven to 350 degrees.

Taco Meat Filling
- While the potatoes are roasting, heat a large skillet to medium-high heat and put 1 tbsp of olive oil in the pan

- Push to one side and add your ground turkey. Cook the ground turkey until browned
- Drain your meat mixture and return to the pan. Reduce heat to medium heat
- Next, add your taco seasoning (to package directions), greek yogurt, and cheese and stir to combine
- Drain your black beans and add to the meat mixture and stir to combine
- Let come to a gentle bubble and then simmer for 2 minutes
- Set aside until you're ready to stuff and serve your potatoes
