If you’re like me, you may find yourself looking for easy, simple recipes that come together quickly. While I enjoy cooking, during the week, I try to limit my time in the kitchen to enjoy doing other activities. That’s why I love easy sheet pan dinners. It’s extremely convenient and doesn’t require much brain power to pull off.

WHAT DOES CHICKEN SHEET PAN FAJITAS TASTE LIKE?

The only thing missing is the smoke billowing in your face when you order these from your favorite Mexican restaurant. These have the same deep flavor profile thanks to the mix of spices used on the chicken. They have just the right amount of kick at the end with the jalapeño but the shallot and lime helps balance out the flavors. Of course, if you love spice, you can add more jalapeños or even add pickled jalapeños.

WHY DO I LOVE THESE SHEET PAN FAJITAS

I love any sheet pan dinners because of their flexibility and ease of putting a dish together. If you tried my shrimp enchilada bowl recipe, then you know I absolutely love Tex-Mex flavors. This dish is another way for me to get those similar flavors but enjoy in a healthy way. We swap out traditional refried beans for black beans and Mexican rice for more wholesome jasmine rice.

WHAT INGREDIENTS DO I NEED?

I’ll admit the ingredients list LOOKS long, but I promise most of these spices you already have in your spice cabinet. I’m also sure you have some peppers on hand that may need to be used in the next few days before they have to be tossed completely.

  • Worcestershire sauce
  • Lime (

FAJITA BOWL

  • Handful spinach
  • Corn
  • Black beans
  • Jasmine rice
  • Shallot
  • Avocado

ARE THESE GOOD FOR MEAL PREP?

Absolutely! These sheet pan fajitas are the perfect meal prep recipe. When I make these for meal prep I usually add all of my ingredients into a air tight container. I’ll pack my spinach (or lettuce) in a ziplock bag and these 2oz containers are perfect to add salsa, guacamole or the perfect portion of queso.

Equipment

Ingredients
  

  • 1 lb Chicken breast
  • 1/2 cup Red bell pepper
  • 1/2 cup Yellow bell pepper
  • 1/2 cup Onion
  • 1 whole Jalapeño

Spices

  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1/4 cup Worcestershire sauce
  • 1 tsp Black Pepper
  • 1 tsp Salt
  • 1/4 wedge Lime juiced
  • 1 handful Cilantro chopped

Bowl Ingredients

  • 1 handful Spinach
  • 1/4 cup Corn fresh or frozen
  • 1/4 cup Black Beans
  • 1/4 cup Jasmine rice
  • 1 tsp Shallot or red onion chopped
  • 1/4 sliced Avocado

Instructions
 

  • Preheat oven to 350 degrees.
  • Slice chicken breast to 1 inch pieces and place in a bowl. Season with your spices and Worcestershire sauce. Mix thoroughly to ensure all chicken is evenly coated.
  • On a sheet pan, line with foil and spray with Pam. Place your chicken in an even layer on the pan. Next add your sliced peppers and squeeze your lime juice on top of the chicken and peppers. Place the pan in the oven and cook for 20 – 25 minutes or until chicken is cooked through.
  • While chicken is cooking, prepare your remaining ingredients for your bowl. Place the spinach, jasmine rice, corn and black beans in your serving bowl.
  • Next add the chicken fajitas and top with sliced avocado, shallot and extra cilantro.
