I’ve learned that the best combinations are those that you least expect. I tried these lemon blueberry pancakes and this flavor combination was insane! Slightly sweet and a little tart makes them the perfect breakfast for any morning. This breakfast dish came about from a recent trip to Portland where I tried blueberry pancakes with a lemon cream sauce. When I say they were the best pancakes I’d ever tasted, I still think about them. Naturally I always try to recreate meals I enjoy at restaurants at home, so I immediately started thinking about how I could make these myself.
WHY PROTEIN LEMON BLUEBERRY PANCAKES
Well, why not? Seriously these are so yummy that you would kick yourself if you didn’t at least try them once. Bringing together two of my favorite tastes, both blueberries and lemon, makes this a winning combination.
Also, by using Krustez blueberry protein pancake mix as the base, you’re ensuring you get a little extra protein with every bite. Who doesn’t love enjoying a favorite breakfast that is jammed packed with nutrients?
WHAT DO I NEED FOR THESE PROTEIN PANCAKES
Ingredients for these pancakes are pretty simple if you choose to take a shortcut like I did and use a box mix. I used Krustez blueberry protein pancake mix for a little extra blueberry flavor, however you can use any protein pancake mix you want.
In addition to the pancake mix, you will need:
- Fresh squeezed lemon
- Lemon Zest
- Blueberries
- Vanilla extract
- Almond Milk
WHAT OTHER TOPPINGS OR MIX INS CAN I USE
Since the base of this recipe is blueberry base, it lends itself to being versatile in other flavor parings. Some other combinations or mix ins to try are:
- Strawberries
- Banana
- Blackberries
- Walnuts
- Cinnamon
However don’t be limited by this list. Feel free to explore any combination you choose to see if you enjoy it!
HOW TO MAKE LEMON BLUEBERRY PANCAKES
First pre-heat a non-stick skillet to medium heat.
Next mix all of your protein pancake ingredients together, pancake mix, blueberries, lemon zest and lemon juice, vanilla extract and almond mix.
Mix all ingredients together well, being sure not to overmix.
Once mixture is incorporated, pour about ¼ cup into your pan and brown on both sides. Repeat the steps with the remaining mixture.
Once they are cooked through, top with extra blueberries and lemon zest if desired. Can also top with maple or sugar free syrup.
Blueberry Lemon Pancakes
Ingredients
- 1/2 cup Protein pancake mix
- 1/4 cup Blueberries fresh or frozen
- 1 tsp Vanilla extract
- 1/2 cup Almond milk Vanilla
- 1 tbsp Lemon zest
- 1.5 tbsp Lemon juice
Instructions
- Pre heat non-stick skillet to medium heat
- Next, in a large bowl, mix all ingredients together
- Mix ingredients well, being sure not to over mix
- Once mixture is incorporated, pour about 1/4 cup into your pan and brown on both sides
- Repeat steps with remaining mixture
- Once pancakes are cooked through, top with additional blueberries and lemon zest, maple or sugar free syrup if desired
