Great for dipping. Serve them with ketchup and mustard or make the special sauce below for an easy burger-inspired dipping sauce.

Ingredients You’ll Need

Ingredients for cheeseburger bombs including ground beef, biscuits, American cheese, pickles and onion

Here’s what you’ll need to make these easy cheeseburger bombs:

Ground beef: One pound of lean ground beef makes the savory filling for the bombs.

Worcestershire sauce: Adds savory, umami flavor to the beef and helps give it that classic burger taste.

Garlic powder, paprika, salt, and black pepper: Simple seasonings that add plenty of flavor without overpowering the other ingredients.

Dill pickles: Finely chopped dill pickles add acidity and that unmistakable cheeseburger flavor. Make sure they’re finely chopped so they’re easy to distribute throughout the filling.

Yellow onion: Slowly cooking the onion until caramelized adds a slightly sweet, savory flavor that takes these beyond a basic beef-and-cheese filling.

American cheese: For this recipe, American cheese is perfect. It melts beautifully inside the bombs and gives them that classic cheeseburger flavor.

Refrigerated biscuits: Use the smaller, regular-size refrigerated biscuits rather than jumbo or Grands-style biscuits. You’ll need approximately 20 biscuits.

Egg wash: This is optional, but a light coating helps the biscuit dough develop a shiny, golden-brown finish.

Sesame seeds: Sprinkling sesame seeds over the dough before baking makes the finished bombs look and taste even more like little cheeseburgers.

How to Make Cheeseburger Bombs

1. Caramelize the onions

Heat a small amount of oil or butter in a skillet over medium-low heat. Add the finely diced onion and a small pinch of salt.

Cook for about 10–15 minutes, stirring occasionally, until the onions are soft and golden brown. Remove them from the skillet and set aside.

2. Cook the ground beef

Add the ground beef to the same skillet and cook over medium heat, breaking it into small crumbles as it cooks.

Once the beef is browned, drain any excess grease if necessary.

Add the Worcestershire sauce, garlic powder, paprika, salt, and black pepper. Stir well and cook for another minute so the seasonings evenly coat the beef.

Remove the skillet from the heat and stir the finely chopped dill pickles into the ground beef mixture.

Allow the filling to cool slightly before assembling the bombs.

3. Assemble the bombs

Preheat the oven to 375°F and line a baking sheet with parchment paper.

Flatten each piece of biscuit dough into a small circle.

Place approximately 1½ tablespoons of the ground beef mixture in the center of the dough.

Top the beef with a small amount of caramelized onion followed by ½ slice of American cheese.

Pull the edges of the biscuit dough up and around the filling. Pinch the edges firmly together to seal, then place the bomb seam-side down on the lined baking sheet.

Repeat with the remaining biscuits and filling.

4. Add the sesame-seed topping

For a shinier, golden finish, lightly brush the tops of the biscuit bombs with egg wash.

Sprinkle each one with sesame seeds.

5. Bake

Bake the cheeseburger bombs at 375°F for 13–15 minutes, or until the biscuit dough is puffed and golden brown.

Let them cool for a few minutes before serving—the cheese inside will be hot!

Easy Special Sauce for Dipping

You can absolutely serve these with regular ketchup or mustard, but a simple burger sauce makes them even better.

Combine:

  • ¼ cup light mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon dill relish
  • ½ teaspoon Worcestershire sauce

Stir until smooth and adjust the mustard or relish to taste.

Serve the sauce on the side for dipping rather than adding it to the filling. This keeps the biscuit dough from getting soggy while baking and lets everyone choose their favorite dipping sauce.

Tips for the Best Cheeseburger Bombs

Don’t overfill the dough. About 1½ tablespoons of beef filling is plenty for the smaller biscuits. Overfilling makes the bombs much harder to seal and can cause them to open while baking.

Let the beef cool slightly. Very hot filling can soften the refrigerated biscuit dough and make it harder to work with.

Chop the filling ingredients finely. Small pieces of beef, pickle, and onion make the bombs easier to fill and ensure you get a little of everything in each bite.

Seal the dough well. Pinch the seams together firmly and bake the bombs seam-side down.

Use American cheese for the best melt. Cheddar cheese can certainly be substituted, but American gives these the creamy, gooey cheese center you’d expect from a classic cheeseburger.

Variations and Substitutions

You can easily customize the filling based on your favorite burger toppings. Try swapping American cheese for cheddar cheese or pepper jack, adding cooked bacon for bacon cheeseburger bombs, or leaving out the pickles for anyone who isn’t a fan.

You can also use larger refrigerated biscuits. Just keep in mind that jumbo biscuits will require more filling and may need additional baking time.

What to Serve with Cheeseburger Bombs

For an appetizer or game-day spread, serve these alongside your favorite finger foods with special sauce, ketchup, and mustard for dipping.

For dinner, pair a few cheeseburger bombs with a simple salad, roasted vegetables, fries, or fresh fruit for an easy family meal.

How to Store and Reheat

Store leftover cheeseburger bombs in an airtight container in the refrigerator.

To reheat, warm them in the oven or air fryer until heated through. This will help crisp the biscuit exterior again rather than making it soft.

Frequently Asked Questions

You can prepare the ground beef filling and caramelized onions ahead of time and refrigerate them until you’re ready to assemble the bombs. For the best texture, wait to wrap the filling in the biscuit dough until shortly before baking.

Yes. Cheddar cheese works well in cheeseburger bombs, although American cheese gives you a smoother, creamier melt and a more classic burger flavor.

Avoid overfilling them and make sure you pinch the biscuit dough together tightly around the filling. Place each bomb seam-side down on the baking sheet before baking.

Ketchup, mustard, ranch, barbecue sauce, or burger sauce all work. My favorite is the easy special sauce made with light mayonnaise, ketchup, mustard, dill relish, and Worcestershire sauce.
