Blueberry Lemon Pancakes

These Blueberry lemon pancakes are the perfect combination of sweet and tart. Sure to brighten up any breakfast morning.

Ingredients
  

  • 1/2 cup Protein pancake mix
  • 1/4 cup Blueberries fresh or frozen
  • 1 tsp Vanilla extract
  • 1/2 cup Almond milk Vanilla
  • 1 tbsp Lemon zest
  • 1.5 tbsp Lemon juice

Instructions
 

  • Pre heat non-stick skillet to medium heat
  • Next, in a large bowl, mix all ingredients together
  • Mix ingredients well, being sure not to over mix
  • Once mixture is incorporated, pour about 1/4 cup into your pan and brown on both sides
  • Repeat steps with remaining mixture
  • Once pancakes are cooked through, top with additional blueberries and lemon zest, maple or sugar free syrup if desired
