Blueberry Lemon Pancakes

- 1/2 cup Protein pancake mix
- 1/4 cup Blueberries fresh or frozen
- 1 tsp Vanilla extract
- 1/2 cup Almond milk Vanilla
- 1 tbsp Lemon zest
- 1.5 tbsp Lemon juice
Pre heat non-stick skillet to medium heat
Next, in a large bowl, mix all ingredients together
Mix ingredients well, being sure not to over mix
Once mixture is incorporated, pour about 1/4 cup into your pan and brown on both sides
Repeat steps with remaining mixture
Once pancakes are cooked through, top with additional blueberries and lemon zest, maple or sugar free syrup if desired
