INGREDIENTS NEEDED FOR HEALTHY PROTEIN OATMEAL BREAKFAST COOKIES

Gather these simple ingredients for these high-protein cookies 

  • Ripe bananas –  a soft texture and sweet taste. As bananas ripen, their starches convert into sugars, resulting in a sweeter flavor.
  • Old Fashion Oats – acts as a binding agent for the protein cookie dough
  • Almond butter – has a creamy consistency and a nutty flavor
  • Chocolate chips – adds a rich chocolatey flavor to the finished cookie
  • Dried cranberries – these offer a sweet and slightly tangy flavor 
  • Protein powder – choosing the right type of protein powder is key as some powders don’t do well baking at a high temperature. I prefer to bake with a whey protein concentrate powder like True nutrition
  • Sugar – I used date sugar however raw sugar, brown sugar, agave or honey works well too. Or you can skip any added sugar and go with the bananas natural sweetness.

HOW TO MAKE HEALTHY BREAKFAST COOKIES

Pre heat oven to 325 degrees.

In a large mixing bowl, combine the dry ingredients including the old fashion oats, protein powder, and sugar and whisk to combine. Next add the chocolate chips and dried cranberries. Give it a quick stir to incorporate into the mix. 

Next, heat the almond butter in the microwave on low for approximately 40 seconds or until it is a smooth consistency. Add the almond butter to the dry ingredients. Lastly in a separate bowl, mash the bananas until they are smooth and add to the dry mixture.

Mix until the bananas are well mixed into the cookie dough. On a cookie sheet, place a piece of parchment paper on the baking sheet and spray with olive oil. Next take approximately 2 tablespoons of the cookie dough or use a small cookie scoop and form the dough into a cookie shape. Repeat this process until all the dough is used. Should make about 6 – 8 cookies. 

Bake cookies in preheated oven for 15-20 minutes or until they cookies are golden brown on the outside but still have a chewy texture on the inside. 

Remove from oven and let cool on a cooling rack for 2-3 minutes.

SUBSTITUTIONS AND ALTERNATIVES

  • Substitute vanilla protein powder for chocolate protein powder to amplify the chocolate flavor of the cookies. 
  • Use peanut butter instead of almond butter for a more pea-nutty flavor and to make them peanut butter protein cookies. 
  • Swap the dried cranberries for raisins for protein oatmeal raisin cookies.
  • Add nuts like pecans, walnuts or chia seeds for extra healthy fats and additional protein and flavor.

Store these healthy cookies in an airtight container either in the fridge or at room temperature for up to one week.

FAQ’s

Can I use quick oats for this recipe?

Quick oats tend to not absorb the wet ingredients as well and makes the cookies unable to hold their shape. Old fashion oats works best for this recipe as the oats have a thicker texture and hold up to the wet batter. 

Can I use vegan protein powder?

Can I freeze protein oatmeal cookies?

Yes these cookies freeze really well. They can be frozen up to 2 months. To properly freeze cookies, first wrap the cookie in saran wrap and then in foil. You can place them in a ziplock bag for added freshness.
