How did these buffalo chicken tacos come about? I’m so happy you asked. I went to a local taco restaurant and the waitress recommended the buffalo chicken tacos as her newest favorite menu item. Naturally I had to try them and was so happy I did. The heat of the hot sauce gives just the right amount of kick and mixed with the tangy of the ranch dressing and lime juice, it’s the perfect balance to cool everything down.
WHY EASY BUFFALO CHICKEN TACOS
Simply because it’s the perfect easy dinner recipe or it can be tailored for meal prep as well. These tacos come together in literally no time with just a few simple ingredients. I love the creamy, lime flavor that mixes so well with the heat of the buffalo sauce. It’s the perfect flavor combination.
If you’re looking for an alternative to your traditional tacos, these will surely fit the bill. If buffalo wings are generally your thing, then you will love these buffalo chicken tacos.
INGREDIENTS FOR BUFFALO TACOS
When I say the ingredients are so simple for this recipe, guaranteed you have all or most of the ingredients needed on hand. What you will need are:
- Chicken breasts (or rotisserie chicken)
- Corn tortillas
- Lettuce
- Ranch dressing
- Pickles
- Buffalo sauce
You can easily make homemade ranch dressing and homemade buffalo sauce if you prefer. However to keep this recipe simple, I purchased greek yogurt ranch dressing and Frank’s buffalo hot sauce. Both can be found at your local grocery store.
HOW TO MAKE BUFFALO CHICKEN TACOS RECIPE
First, prep your chicken breasts by seasoning with salt, black pepper and paprika. There are several ways you can choose to cook your chicken by either cooking it in the air fryer, on the stove top or via instant pot. I cooked my chicken in the air fryer on 350 degrees for approx. 12 minutes. Cooking time will vary depending on the thickness of your chicken.
*Note you can choose to use either leftover chicken, chicken thighs or rotisserie chicken for this recipe as well.
Once your chicken is cooked, remove and shred using two forks. On the stovetop, heat a non-stick skillet to medium high heat and spray with some extra virgin olive oil. Toss in your shredded chicken and pour buffalo wing sauce over the chicken and stir to coat well. Bring the shredded buffalo chicken to a simmer and once the chicken is well coated, turn off the heat and set aside.
In a small bowl, add your greek yogurt ranch dressing and lime juice and season with black pepper and stir to combine. Toss in your shredded lettuce and coat well.
Lastly, heat a small skillet on medium heat and spray with extra virgin olive oil. Warm tortillas in your skillet on both sides for about 1 – 2 minutes.
Now you’re ready to build your tacos. Place the corn tortilla on your plate and load it with the buffalo chicken mixture. Top with the ranch shredded lettuce and additional toppings. I chose to top mine with chopped dill pickles and chopped tomatoes.
ALTERNATIVES FOR DIFFERENT FLAVOR
There are a few alternative toppings you can use to add some additional or slightly different flavor to these tacos.
First you can choose to use flour tortillas instead of corn tortillas. My favorite whole wheat tortillas are these by Xtreme Wellness. Next if you prefer blue cheese instead of ranch, you can use a low fat blue cheese dressing to replace the ranch dressing.
Some other favorite taco toppings you can add are:
- Celery
- Blue cheese crumbles
- Red onion
- Green onions
- Coleslaw mix
- Fresh cilantro

Ingredients
- 1 lb Chicken breast or Chicken thighs
