Easy Slow Cooker Chicken Tortilla Soup
This slow cooker chicken tortilla soup is the kind of cozy dinner that makes busy days feel a little easier. Add the chicken, beans, corn, tomatoes and seasonings to the slow cooker, let everything cook, then finish it with a little low-fat cream cheese and fresh lime juice.
The result is a hearty, lightly creamy soup with tender shredded chicken, plenty of vegetables and just enough smoky flavor. It tastes like comfort food, but it is still protein-packed, family-friendly and simple enough for a weeknight.
Why You’ll Love This Recipe

- Easy dump-and-go prep: Most of the ingredients go straight into the slow cooker with no sautéing required.
- Protein-packed: Chicken and black beans make every serving satisfying.
- Creamy without being heavy: Just ¼ cup of low-fat cream cheese gives the broth a smooth, creamy finish.
- Great for toppings: Everyone can finish their own bowl with tortilla strips, avocado, cheese, cilantro or Greek yogurt.
- Perfect for fall: It is warm and comforting without requiring much hands-on cooking.

Kim’s Tested Recipe Notes
After testing, 2½ cups of chicken broth created the best hearty consistency—enough broth for soup, but not so much that the flavor became diluted.
I also used mild Rotel plus fire-roasted tomatoes, added ¼ cup low-fat cream cheese for a lightly creamy finish and used the juice of ½ lime so the citrus brightened the soup without taking over.
My chicken shredded easily after about 3½ to 3¾ hours on HIGH.
Ingredients You’ll Need

- Boneless, skinless chicken breasts: You’ll need about 1½ pounds. The chicken cooks directly in the soup and is shredded near the end.
- Black beans: Drain and rinse one 15-ounce can before adding it to the slow cooker.
- Corn: One cup of frozen corn adds color and a subtle sweetness. There is no need to thaw it first.
- Fire-roasted diced tomatoes: One 14.5-ounce can adds deeper flavor than plain diced tomatoes.
- Mild Rotel: One 10-ounce can supplies tomatoes and green chiles without making the soup overly spicy.
- Onion and garlic: One diced medium onion and three minced garlic cloves build the savory base.
- Low-sodium chicken broth: The tested recipe uses 2½ cups for a hearty, spoonable consistency.
- Seasonings: Chili powder, cumin, smoked paprika and oregano give this tortilla soup warm, smoky flavor. Salt and black pepper round everything out.
- Low-fat cream cheese: Just ¼ cup makes the broth creamy without weighing down the soup. Soften it first so it blends smoothly.
- Fresh lime juice: The juice of ½ lime added at the end wakes up all the flavors.
- Cilantro: Optional, but delicious stirred into the soup or sprinkled on top.
- Toppings: Try crispy tortilla strips, avocado, shredded Mexican-blend cheese, cilantro, lime wedges, sliced jalapeños or plain Greek yogurt.
✨ Optional green-chile note: Because the Rotel already contains green chiles, an additional can is not required. Add one small can of diced green chiles only if you want a stronger chile flavor.
How to Make Chicken Tortilla Soup in the Slow Cooker

- Fill the slow cooker. Add the chicken breasts, black beans, frozen corn, fire-roasted tomatoes, Rotel, onion, garlic, chicken broth and seasonings to the slow cooker. Stir the ingredients around the chicken.
- Cook until tender. Cover and cook on HIGH for 3½ to 4 hours or on LOW for 5 to 6 hours, until the chicken reaches 165°F and shreds easily. In testing, the chicken was ready after approximately 3½ to 3¾ hours on HIGH.
- Shred the chicken. Transfer the cooked chicken to a plate or cutting board, shred it with two forks and return it to the slow cooker.

- Make it creamy. Place the softened cream cheese in a small bowl. Whisk it with about ½ cup of hot broth from the slow cooker until mostly smooth, then stir the mixture into the soup.
- Finish the soup. Cover and cook for another 20 to 30 minutes, then stir in the juice of ½ lime and cilantro, if using. Taste and adjust the salt and pepper.
- Add your toppings. Ladle the soup into bowls and finish with crispy tortilla strips and your favorite toppings.

Tips for the Best Slow Cooker Chicken Tortilla Soup
- Do not add the cream cheese as a cold block. Softening it and whisking it with hot broth first helps it melt evenly into the soup.
- Use low-sodium broth. Canned beans, tomatoes and toppings can all add salt, so low-sodium broth gives you better control.
- Check the chicken early. Slow cookers vary. Start checking near the 3½-hour mark on HIGH so the chicken stays tender.
- Wait to add the lime. Fresh lime tastes brighter when it is stirred in after cooking.
- Keep the tortilla strips separate. Add them just before serving so they stay crisp.
Is Chicken Tortilla Soup Spicy?
This version is mild as written because it uses mild Rotel and only a moderate amount of chili powder. For more heat, add sliced jalapeños as a topping or include the optional diced green chiles. Keeping the extra heat in the toppings makes the base soup more family-friendly.
Topping Ideas
The toppings are half the fun! Set them out in small bowls so everyone can build their own:
- Crispy tortilla strips or crushed tortilla chips
- Diced avocado
- Shredded Mexican-blend cheese
- Chopped fresh cilantro
- Lime wedges
- Sliced fresh or pickled jalapeños
- Plain Greek yogurt or sour cream

Storage and Reheating
Let leftover soup cool, then refrigerate it in an airtight container for up to 4 days. Store crispy tortilla strips and other toppings separately.
Reheat individual portions in the microwave or warm the soup gently in a saucepan over medium-low heat, stirring occasionally. Because the broth contains cream cheese, avoid a hard boil while reheating.
To freeze, cool the soup completely and transfer it to a freezer-safe container, leaving a little room for expansion. Freeze for up to 3 months. Thaw it overnight in the refrigerator and stir well as it reheats. The creamy broth may separate slightly after freezing, but gentle heat and a good stir will bring it back together.
