- 2 lbs Boneless skinless chicken breasts or thighs
- 3 whole Bell peppers red, yellow, green, sliced
- 1/2 Yellow onion thinly sliced
- 1 pkg Fajita seasoning
- 1 tsp Chili powder
- 1 tsp Cumin
- 1.5 tbsp Olive oil
- 2 tbsp lime juice
- Salt + pepper to taste
In a small bowl mix fajita seasoning with oil to create a marinade
In a medium bowl, combine the chicken breast and the fajita seasoning ensuring the chicken is well coated
Place half of the sliced peppers and onions on the bottom of the slow cooker
Add chicken on top and lime juice
Top with the remaining bell peppers and onions
Cover and cook on low heat for 6–8 hours or on high heat for 3–4 hours, until the internal temperature of the chicken reaches 165ºF
Remove chicken, shred or slice, then return to the pot to soak up that flavorful fajita mixture
