Ingredients
  

  • 2 lbs Boneless skinless chicken breasts or thighs
  • 3 whole Bell peppers red, yellow, green, sliced
  • 1/2 Yellow onion thinly sliced
  • 1 pkg Fajita seasoning
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1.5 tbsp Olive oil
  • 2 tbsp lime juice
  • Salt + pepper to taste

Instructions
 

  • In a small bowl mix fajita seasoning with oil to create a marinade
  • In a medium bowl, combine the chicken breast and the fajita seasoning ensuring the chicken is well coated
  • Place half of the sliced peppers and onions on the bottom of the slow cooker
  • Add chicken on top and lime juice
  • Top with the remaining bell peppers and onions
  • Cover and cook on low heat for 6–8 hours or on high heat for 3–4 hours, until the internal temperature of the chicken reaches 165ºF
  • Remove chicken, shred or slice, then return to the pot to soak up that flavorful fajita mixture
