Ingredients
  

  • 1 pkg Chicken Sausage
  • 3 whole Bell Peppers mix of yellow, red and green
  • 1/2 medium Onion
  • 1 pkg Baby Potatoes 1.5 lb bag
  • 2 tbsp Olive Oil
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Italian Seasoning
  • Salt & Black Pepper to taste
  • Red Pepper Flakes Optional

Instructions
 

  • Preheat the oven to 375°F (220°C) and line a large sheet pan with aluminum foil or parchment paper.
  • Toss the potatoes with 1 tbsp olive oil, garlic powder, smoked paprika, salt, and black pepper. Spread them on the sheet pan
  • Add the sausage and veggies: Toss the sausage, bell peppers, and onions with the remaining olive oil and oregano. Add to the sheet pan with the potatoes.
  • Roast for 35 - 40 minutes, stirring halfway through, until the sausage is golden brown and the potatoes are crispy.
  • Optional: Garnish with fresh parsley before serving
