Preheat the oven to 375°F (220°C) and line a large sheet pan with aluminum foil or parchment paper.
Toss the potatoes with 1 tbsp olive oil, garlic powder, smoked paprika, salt, and black pepper. Spread them on the sheet pan
Add the sausage and veggies: Toss the sausage, bell peppers, and onions with the remaining olive oil and oregano. Add to the sheet pan with the potatoes.
Roast for 35 - 40 minutes, stirring halfway through, until the sausage is golden brown and the potatoes are crispy.
Optional: Garnish with fresh parsley before serving
