Ingredients
  

  • 4 whole Eggs
  • 4 4 egg whites or substitute plant-based milk for a lighter version
  • 1/3 cup Shredded cheese cheddar cheese, feta cheese, goat cheese, or colby jack
  • 1/2 cup Blended cottage cheese for creamy eggs and extra protein
  • 1/2 Red bell pepper diced
  • 1/3 cup Canadian bacon diced
  • Salt to taste
  • Black pepper to taste
  • Cooking spray or olive oil to prepare the pan

Instructions
 

  • Preheat oven to the right temperature: 350°F.
  • Line a half sheet pan or rimmed sheet pan with parchment paper and lightly coat with cooking spray or olive oil.
  • In a large bowl, whisk together whole eggs, egg whites, blended cottage cheese, salt, and black pepper until smooth.
  • Stir in the diced red bell pepper, green onion, and Canadian bacon and shredded cheese.
  • Pour the egg mixture into the prepared sheet pan.
  • Place on the center rack of the oven and bake for 18–22 minutes, depending on cooking time and your oven. The eggs should be set and slightly golden brown on the edges.
  • Let the hot pan rest on a cooling rack for 5 minutes before slicing.
  • Cut into squares or rectangles for sandwiches, burritos, or grab-and-go snacks.
