Pre heat oven to 375 degrees
In a large bowl, combine all ingredients for the chicken meatballs
Once ingredients are thoroughly incorporated, roll into approx. 1.5 - 2 inch balls
Pre heat cast iron skillet over medium heat. Once heat add 2 tbsp of grape seed oil
Place meatballs in a single layer in cast iron skillet to brown them on all sides. Note this may have to be done in batches so as not to crowd the pan
Once all meatballs have been browned, turn off the heat and return all meatballs to the pan
Next add your sauce ingredients, crushed tomatoes, salt and pepper
Lastly, top with both your parmesan and mozzarella cheese
Bake in oven for 15 - 20 minutes or until meatballs are cooked through and the cheese is brown and bubbly.
Remove from oven and allow to cool slightly before serving.
