Place chicken breast on a cutting board. If you have large chicken breast, slice them into thin slices with a sharp knife. Cover with plastic wrap and pound with a meat mallet until evenly thin (thinner pieces cook more evenly). Pat dry with a paper towel.
In a small bowl, combine olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Brush or rub evenly over both sides of the chicken pieces.
Lightly coat basket with cooking spray or line with parchment paper. Place chicken breast in a single layer (don’t overlap the sides of the chicken).
Set air fryer to 375 degrees F. Cook 8–10 minutes, flipping at the halfway point for even cooking. Use an instant meat thermometer to check the internal temperature of the chicken—it should reach 165°F at the thickest part.
Let cooked chicken rest 2–3 minutes before slicing. This locks in juices and keeps it tender.
